A quick way to make dinner is enchiladas. Now, I don't think I've ever bought enchilada sauce, but this recipe has made them my favorite. Here's the hack: use salsa instead! It works great. This is where I got the hack from:

Recently, I had hamburger on hand, so I used that instead of chicken for this recipe. You also don't need the green chiles, but they are nice to have. I do add more salsa depending on what I'd like the end result to be.
Oh yeah... and this dinner with hamburger took me 30-35 minutes. I always consider that an accomplishment when it comes together quickly!

a dinner favorite
So I have had a lot of fun dinner "successes" lately, but here's a recent favorite that is easy to make.
Homemade Rice-a-Roni
Melt 1/4 cup butter in a pan (I haven't experimented yet with reducing this, but you might be able to!). Put 1/4 lb. uncooked, broken spaghetti noodles in it (about a handful) and 1 cup rice. Saute in the pan for about five minutes - stirring - the noodles will brown.
Season with salt, pepper, and seasoning of choice. For me, I've done paprika and Lawry's with chicken, and paprika and a steak seasoning with venison (a beef substitute). Put beef or chicken broth (maybe a can?) into the pan. Put small cubes of raw steak/venison or chicken in as well as onions, green peppers, mushrooms, etc. Bring to boil; reduce to simmer. Simmer for 15 minutes or so. (Maybe check at 10 minutes to make sure there's enough liquid.)
With my chicken version, we had plenty of broth so it was more of a soup. With the venison version, we had much less broth, so we ate it with a fork. Good flavor, and an easy dish to make in a flash! It took me about 40-45 minutes to make it - but I had frozen meat I defrosted briefly in the microwave first.
You can make this with just the noodles, rice, and broth or add the meat and as many or few veggies as you'd like and make more of a meal out of it.

our second anniversary
Yesterday was our second anniversary. Erik and I had a wonderful time celebrating! Since we just had a night out to eat celebrating us for Valentine's Day, we thought it would be fun to stay home and make a restaurant style meal since we both enjoy baking and cooking.
When we were dating, Erik surprised me at home by making a ribeye steak meal with mashed potatoes, some type of veggie, a roll... the full steak dinner, but homemade. Candlelight and everything. We loved it so much we did it again last night with a few changes.
I don't have pics of Erik grilling, but he took a little grill (one he uses for camping) and grilled cauliflower, asparagus, and ribeye steak to perfection. So delicious. Inside the house, I made this recipe:

The potatoes are super crispy on the outside and super smushy on the inside. It takes a while in a 500 degree oven, but definitely worth it! With the juice we had as a beverage, the full meal looked like this...

For dessert, we decided to replicate the molten chocolate cake you see at Chili's (and you can get something similar at a lot of other restaurants as well)....Thanks to Food Network magazine we had the recipe.

Erik needed to test the batter to make sure it tasted okay. (Okay, I did too; I just didn't take any pictures as evidence!) Tuck wanted some too.

The whole meal was very good. We enjoyed it all very much and complimented ourselves plenty. ;-) In the middle of making the dessert, we watched Despicable Me, a cartoon that came out last summer, and enjoyed that. All in all, a wonderful way to enjoy our two years together.

dinner idea

Erik and I just wrapped up dinner. Tried a new recipe and really enjoyed it.
Cheeseburger Soup
If you look at the reviews, there are a lot of ways you can play with the recipe. I didn't have chicken broth, so I used beef broth. I also didn't add sour cream. It's a fun recipe though and tastes very good.
